These brownies have been a favorite of mine for years. I can’t make them often because they are sinfully addicting. Seriously, I can’t stop eating them. Just look at that ooey gooey caramel layer!

This caramel brownie recipe starts with a cake mix. These brownies turn out fudgy and ooey gooey every time. A must try brownie!These caramel brownies  start with a chocolate cake mix, so they are also easy to make. The hardest part is unwrapping all the caramels. I can usually talk one of my kids into doing that job. 😉

Most things I like to eat all warm and gooey, but not these. I think they taste better after they have been chilled for awhile. Otherwise the chocolate and caramel are all melted together and you can’t really taste either one.
These caramel brownies are some of the most decadent brownies you will ever taste. This brownie recipe is always a crowd pleaser!
I think they taste best with chopped pecans and added, but you can leave them out. Sometimes I add coconut, and that is also yummy.

Caramel Brownies

Ingredients
  • Brownies:
  • 1 box chocolate cake mix (I like dark chocolate or devil's food.)
  • 1/3 cup evaporated milk
  • 2/3 cup melted butter or margarine
  • Filling:
  • 50 caramels, unwrapped
  • 1/3 cup evaporated milk
  • 1 1/2 cups semi-sweet chocolate chips
  • 3/4 cup chopped pecans
  • 1/2 cup coconut (optional)
  • Notes:
  • -These are really rich, so cut them into small pieces. That way you can have two. 🙂
Instructions
  1. Well grease a 9x13" cake pan and set aside. (I use the non-stick spray from Costco.)
  2. Mix cake mix, 1/3 cup evaporated milk, and butter in a mixing bowl till smooth. Spread half of batter into your prepared pan and bake at 350° for 6 minutes.
  3. Meanwhile, melt caramels and 1/3 cup evaporated milk in a glass bowl in the microwave, stirring often.
  4. Remove brownies from oven and sprinkle the chocolate chips, pecans, and coconut evenly over top. Pour the melted caramel evenly over everything.
  5. Top with remaining dough. I take pieces of the dough and flatten them in my hands (kinda like play-doh) and place them over the top. It’s okay if you have small gaps.
  6. Bake for 15-18 more minutes.
Notes
While brownies are still warm, go around the edge of the pan with a knife or metal spatula to pull the caramel away from the sides. Cool brownies completely before cutting.
