I got this recipe from a friend a few years ago, and it has become a family favorite. It is really fast to make, so start your rice cooking early. (I say that because tonight I forgot and we were waiting around with our mouths drooling waiting for the rice to cook.) I have used several kinds of nuts, but cashews are my favorite. You can use whatever you like. Hope you enjoy!
1 Tbsp oil
3 stalks celery, sliced
3 stalks celery, sliced
1 onion, chopped
2 boneless skinless chicken breasts, cut in chunks or strips
2 Tbsp soy sauce
1 Tbsp sugar
3 Tbsp water
1/2 cup cashews (or other nuts of your choice)
Cook celery and onion in half of the oil till crisp tender, about 3-5 minutes. Remove from pan. Cook chicken in remaining oil. Add veggies back to pan. Mix soy sauce, sugar, and water and add to pan. Stir in nuts and heat through. Serve with rice.
