Italian Chicken Pasta

This is another favorite chicken recipe that I got from a good friend. For how simple it is to make, it is surprisingly delicious. I usually serve it with green salad and foccacia bread. Enjoy!

Chicken Squisito (Italian Chicken with Pasta)  

1-2 Tbsp olive oil
4 boneless, skinless chicken breasts
Salt, pepper, onion powder, and garlic powder
1 onion, diced
1-2 garlic cloves, minced
2 cans Italian seasoned diced tomatoes
1 cup chicken broth
1/3 cup grated Parmesan cheese
1 cup grated Mozzarella cheese
Sprinkle chicken with seasonings and brown in olive oil. Remove from pan. Saute onion and garlic for about 4 minutes. Add tomatoes and broth and simmer for 8 minutes. Place chicken back in pan and stir to combine. Simmer for 10-15 minutes or till chicken juices run clear. Sprinkle cheeses over the top and cover with a lid. Heat just till cheese is melted. Serve over pasta.
Notes:
-I don’t usually have Italian diced tomatoes, so I just use regular diced tomatoes and add about 1 tsp of dried basil, 1/2 tsp dried oregano, and a little bit of dried parsley.
-I use fresh Parmesan cheese. But honestly, half the time I forget to use it and this still tastes wonderful.
