Spinach Salad with Poppy Seed Dressing

This is one of my very favorite salads ever. I'm pretty sure I could make it every week and not get tired of it. Sometimes I add some iceberg lettuce to the spinach, that is also tasty. Don't feel like you have to use all of the toppings I listed, you can do whatever you like. I've had it with mandarin oranges, strawberries, mushrooms, and lots of other things and it is always wonderful. So be creative! Spinach Salad with Poppy Seed Dressing

Salad:
1 large bag spinach
1 cup sliced celery
4-5 green onions, sliced
6 strips bacon, cooked and crumbled
3 hard boiled eggs, diced
1 cup shredded mozzarella cheese
1/3-1/2 cup Craisins
Sugared almonds (optional)
Toss all ingredients together and serve with poppy seed dressing. Or you can combine the spinach, celery, and onions and let people add their own toppings. Poppy Seed Dressing:
3/4 cup oil
1/3 cup sugar
1/3 cup vinegar
1 tsp salt
1 Tbsp poppy seeds
1 squirt prepared mustard
Mix all ingredients together till sugar is dissolved.

Notes:
-This makes a pretty large salad, so I usually serve the dressing on the side. That way if there is any left over, it will keep for a few days in the fridge.
