Pecan Crusted Salmon

When we were first married, my husband did not like fish. This salmon recipe converted him. Totally. This is now one of his favorite meals of all time. I would have to agree with him, it is amazing. It is a prize winning recipe. (Literally- I really did win a prize with it.)

If fish wasn't so stinkin' expensive where we live, we would have this every week. (Well, maybe every other week, but you get the idea.) If you like fish even the tiniest bit, you should try this recipe. Your taste buds (and your heart) will thank you for it.

4 medium salmon fillets
1-2 cups milk
1/2 cup finely chopped pecans
1/4 cup flour
2 Tbsp brown sugar
1 tsp seasoning salt
1/2 tsp pepper
Soak salmon in milk at least 10 minutes. Drain. Mix remaining ingredients. Dip salmon in pecan mix, then brown all sides in a small amount of oil. Place on cookie sheet and bake at 400 for about 15 minutes or till fish flakes easily.
Notes
–To be honest, I'm not sure why you soak the salmon in milk. I think it is supposed to make it taste more fresh or something. I just always do it. But if you live close to large bodies of water and your salmon doesn't have to be flown in, you could probably skip this step.
