Amazing Guacamole (AKA Rotel Dip)

I hope that all of you had a better New Year's Day than I did. I had wonderful plans. Setting goals with my hubbie, taking down the Christmas decorations, playing games with the kids, making yummy food, going shopping so all of us could spend our Christmas money. It was going to be awesome!

Instead I woke up with a horrible cold. Sore throat, nasty sinus headache, runny nose, fever/chills, and upset stomach. I spent almost the entire day on the couch watching tv and sleeping. Yikes! Luckily, today I am feeling better.

My avocados weren't quite ripe enough on New Year's Eve for me to make guacamole, so my husband made it yesterday. It is amazing! I first had it at a scrapping weekend a couple years ago and made sure I got the recipe from my friend. It is so yummy and addicting. If you like guacamole, you have got to try this recipe!!!

Amazing Guacamole (AKA Rotel Dip)

2-3 avocados, finely diced or mashed
3 Roma tomatoes, diced
1 10oz can Rotel, well drained
3-4 green onions
Cilantro, chopped
1 spoonful of mayonnaise (not Miracle Whip)
Garlic salt to taste
Combine all ingredients in a bowl and stir till well blended. Serve with tortilla chips.

Notes:
-You can use as much cilantro as you like. I'm not super fond of it, so we use about a fourth of a bunch.
-The original recipe called for like 1/2 cup Mayo, but I don't think it needs it. It is just to get the consistency the way you like it, so feel free to add more or less.
-This is also really yummy served with tacos or quesadillas.
