Frugal Friday–Lentil Stew

Holy moley, I can't believe this week is almost over. It has flown by! I missed posting a frugal Friday recipe last week, so I was bound and determined to do one for you today. I had good intentions of posting this morning, but I had errands to run and laundry to do. Then I had to make a dish to take to a potluck dinner at our church. Then I had to attend said potluck dinner. My husband and I had a great time. We have the coolest friends!

The day is almost over, but I am managing to sneak a recipe in before the clock strikes midnight, so I get credit, right?

Have you ever eaten lentils before? I hadn't. My mom kept telling me about this great lentil stew that I should try. I kept not trying it because I'd never had lentils, and just thought they sounded kinda yucky. Then she volunteered to make it for a family get together at my house and I agreed, mostly because I didn't want to hurt her feelings. (Sorry mom.) I'm so glad she brought it because man was I wrong about lentils!! I loved it. So did my whole family. The sausage gives it great flavor. So if you've been a little wary of lentils like I was, this might be a good recipe to start with.

Lentil Stew

1# bag lentils
7 cups water
1 onion, chopped
3-4 potatoes, chopped
2 chicken bouillon cubes
3 carrots, sliced
4 cloves garlic, minced
squirt of mustard
1 1/2 tsp cumin
2 green peppers, chopped
1 8oz can tomato sauce
1# sausage, browned
1/4 cup vinegar
2 Tbsp ketchup
2 tsp sugar
Salt, pepper, and garlic powder to taste
Boil lentils in water 10 minutes. Drain. Add 7 cups water and boil 10 minutes with onion. Add rest of ingredients and cook till lentils are tender and veggies are done.

lentils: $.99
onion: $.35
potatoes $.40
carrots: $.45
bouillon, garlic, mustard, cumin, sugar, ketchup: $.40
green peppers: (frozen from my garden, free)
tomato sauce: $.25 on sale
sausage: $1.39 on sale
vinegar: $.20
Grand total: $4.43
Cost per serving: 44 cents

Notes:
-If you buy the green peppers at 2/$1, the total cost is $5.43, the price per serving is 54 cents.
-I'm not going to lie to ya, this is better the first day. The taste is great the next day, but the texture is not quite as good.
