I found this grilled chicken recipe over at the Sister’s Cafe smack dab in the middle of winter. They posted several drool inducing recipes that they used with it, but said it was also great right off the grill. I have been dying for warm weather so we could give it a try. I was all set to make it the first warm weekend that we had. Pulled out all the ingredients, and then discovered to my horror that we were out of chicken. I almost cried.
For the next two weeks, every time we planned on grilling, it rained. I thought I would never be able to try this recipe! But finally the stars finally aligned and we were able to partake. Oh. . . my. . .goodness. I am soooo glad. We loved this chicken!!! The lemon gives it a fresh flavor and makes it nice and tender. The oregano is subtle but yummy. We had it straight off the grill, but I can’t wait to try it in pesto, and salad, and on pizza. . . So many possibilities.You should really try this. I can’t wait till I get to try it again. Definitely a winner!
Lemon Grilled Chicken
3 Tbsp oil
1 tsp minced garlic (I used 1 clove)
1 tsp salt
1/4 tsp pepper
1/2 tsp oregano
1# boneless skinless chicken breast
Combine all ingredients in a gallon size ziplock bag. Squish it around till everything is blended and the chicken is well coated. Marinate overnight in the refrigerator. Grill (or cook in skillet).
