Sunday was my second son's 11th birthday. He loves strawberries, so he requested a white cake with strawberries on it. I had some leftover cream cheese frosting in the fridge that needed to be used up. I combined the two and came up with this cake. It was phenomenal! I will definitely be making it again.
Next time I might add sugar to some of the strawberries, and drizzle the juice onto the cake before adding the filling. That would give it a nice color and add even more moistness. Yum!
*1 cup of cream cheese frosting
1 1/2 cups of cream, whipped
1 pint of fresh strawberries, sliced
Beat the cream cheese frosting till fluffy. Fold in the whipped cream and set aside. Place one of the cake layers on a cake plate, flat side up. (I cut the round top off of mine so it would sit more level.) Cover with a layer of sliced berries. Carefully spread about 3/4 of a cup of the cream cheese mixture over the berries. Top with the remaining cake. Frost with remaining cream cheese mixture. Arrange remaining strawberries on top of the cake. Serve immediately.
*If you don't have cream cheese frosting, just mix 4oz of softened cream cheese with 1 1/2 cups of powdered sugar and 1 tsp of vanilla till smooth and creamy.
