Bow Tie Skillet Lasagna

I was looking for something fast for dinner last night, and found this skillet lasagna recipe on Allrecipes. It doesn’t heat up the oven, and that is a bonus in August, so I decided to try it. I made a few slight changes, and it turned out delicious! My boys told me they liked it better than regular lasagna. Wow! It is soooo much easier and faster. It will definitely be making a regular appearance at our dinner table!

The photo doesn’t do it justice, but we only had a few minutes to eat, so I didn’t have time to take a dozen shots like I usually do. Trust me, it’s good even if it isn’t pretty. I wish I was eating it for lunch, but our microwave died last night, so my hubbie got to take the leftovers. He was actually in the middle of fixing it when someone called with a computer emergency. He dropped what he was doing and went to help them. So I guess he deserves the leftovers anyway. 🙂

Bow Tie  Skillet Lasagna

1/2 pound ground beef
1/2 pound pork sausage
1 onion, chopped
2 cloves garlic, minced
1 14oz can diced tomatoes
8oz can tomato sauce
1 1/2 cups water
1 Tbsp dried parsley
1 tsp dried basil
1 tsp dried oregano
1 tsp salt
2 1/2 cups dry bowtie pasta
3/4 cup cottage cheese
1/4 cup parmesan cheese
1/2 cup mozzarella cheese
Brown meat, onion, and garlic; drain. Add remaining ingredients exceptcheeses. Bring to a boil, then reduce heat. Cover and simmer for 20-25 minutes or till pasta is tender. Combine cottage cheese and parmesan and drop by spoonfuls over tomato mixture. Cover and cook for 5 minutes. Sprinkle with mozzarella cheese and let cook for a couple of minutes till melted.Notes:
-You can just use a pound of ground beef in place of the sausage if you like.
-If you don’t have bow tie pasta, you could use another kind. It may take more or less time to cook, so just check it for done-ness.
