Super Easy Saltine Toffee (AKA Crack)

saltine-toffee-recipe

I needed some last minute "thank you" treats for some friends last night. I pulled out a recipe that I have been wanting to try for months. It only calls for 5 ingredients, so I knew it would come together quickly.
I was right, it was super fast. Maybe a little too fast. Now I can't buy Saltines anymore, because then I would be tempted to make more of these. There is a reason these are commonly referred to as "crack". And it's not just because they are made with crackers. ;) They are seriously addicting. It's a good thing we gave most of them away, because I couldn't stop eating them. If you like toffee like I do, you have got to give these a try!!

Saltine Toffee
1- 1 1/2 sleeves of saltine crackers
1 cup butter
1 cup brown sugar
2 cups chocolate chips
3/4 cup sliced almonds or chopped pecans, toasted
Line a 15×10" jelly roll pan with foil. Spray with non-stick spray. Arrange saltines in a single layer over the bottom of the pan. (I counted mine, but forgot to write down the number. Duh!) Anyway, you will use one sleeve plus a little more. Combine butter and brown sugar in a heavy saucepan and bring to a boil, stirring frequently. Boil for 3 minutes. Pour over the crackers and spread evenly. Bake at 400° for 6 minutes or till hot and bubbly. Remove from the oven and sprinkle with chips. Let sit for a few minutes till the chocolate melts, then spread it around. Top with nuts. Cool completely and break into pieces. This process takes a few hours, so I put mine in the fridge to speed things up a bit.

Notes:
-I was out of milk chocolate chips, so I used semi-sweet. You can use whatever you like.
-When you first start cooking the butter and sugar, it will look like a mess. Don't worry. After 3 minutes it will turn out nice and caramel-y.

Yum! That looks so good. I want some right now. I'm going grocery shopping soon – perhaps I'll have to throw some saltines in the cart?

Those look so yummy. I should have read this earlier today when I first saw it on my dashboard. Would have made a great FHE treat! Next week I guess! Wish I could join you down in Utah County this weekend. But my in-laws are heading out on their mission and so we've got lots of fun family stuff going on. Good luck w/it all though! :)

  4. Just made these today using white sugar & mixed nuts because that's what I had in my cupboard. All I can say is yuuum! Thanks for such an easy treat.

So …. I've made this 2x now and it seriously is addicting — and oh so easy! Thanks so much for this one! Loooove it! My dd thinks I should try it with white chocolate on top sometime – don't know if they'd taste as good?

Have you ever made the thin mint girl scout cookies before w/Ritz? mmmm Yummy!

  6. This is one of our favorite holiday treats. It is so much easier than making real toffee and having to use a candy thermometer. I also printed out and am excited to try the recipe you shared for Sour Cream Apple Bars. I'm glad I stumbled upon your blog. I guess that is what happens when you start following links. :)

  7. I love this stuff. My mom in law makes it but for 2 yrs in a row it tastes really soft, I'm not sure what she's doing but it's not crunchy at all. I'll have to try this recipe .)

  8. Hi! I made this and it came out chewy…any suggestions? It was still yummy, but chewy…hard for my daughter with braces to eat! haha

  9. I make this every Christmas, we call it Christmas Crack lol! I can't have the ingredients on hand any other time, it is waaayyy to tempting. I've never added nuts before though, I'll have to give it a try.
