Coconut Chocolate Chip Cookies

I shared this cookie recipe over at I'm Topsy Turvy a few weeks ago. Ashlee is one of my blogging BFF's. She's talented, creative, cute, and just plain fun to be around. Since I'm hangin' out with her today (hopefully!), I thought this was the perfect day to share  this recipe.

We love coconut at our house, so these cookies were a huge hit. The coconut extract adds great flavor, so don't leave it out. Next time I might try toasting the coconut first. Because I love coconut, but I'm crazy about toasted coconut. So dang yummy! Hope you like 'em. :) coconut-chocolate chip-cookie-recipe
Coconut Chocolate Chip Cookies

1 cup butter, soft
1 1/2 cups sugar
2 eggs
1 tsp coconut extract
2 1/2 cups flour
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 cup flaked coconut
2 cups chocolate chips

Cream butter and sugar. Beat in eggs and coconut extract. Stir in dry ingredients, then coconut and chips. Drop by rounded spoonfuls on lightly greased cookie sheet. Bake at 375° for 9-10 minutes or till lightly browned.
