It has been a less than stellar week around here due to the fact that we have a teething baby on our hands. Yikes. I forgot how miserable it can be. Rachel's not having very much fun either.
I am currently working on the following projects– gallery wall in the upstairs hall, DIY counter re-finishing in the laundry room, St. Patrick's day printables, entry way springification, mantel decorating, and cute hair clip tutorial.
I have been unable to actually complete any of them. What I have been able to do is hold a sad baby. . . and watch a lot of HGTV. Which means I have found even more projects to add to my list. I'm thinking I need my family to move out of the house for a year so I can complete all of my projects UN-interuppted. Totally kidding. Although I would not complain if they took a little mini vacation for a day or two without me. Maybe I'll have to request that for my birthday this year.
As every totally frazzled busy mom knows, weeks like this are perfect for crock pot meals. Just throw a few things together and in a few hours you have an awesome meal ready. Gotta love that!
This chicken actually came together because I was trying to make a recipe for honey glazed chicken but realized I was short on honey. So I just threw a bunch of stuff together and hoped it would be good. Thankfully it was. Really good actually. My family loved it. The red pepper flakes add a nice contrast to the sweetness of the sauce. If you like things spicy, feel free to add more.

Glazed Crock Pot Chicken
4 chicken breasts
Black pepper
1/2 cup soy sauce
2/3 cup ketchup
1/2 cup brown sugar
1/4 cup honey
4 garlic cloves, minced
1/8 tsp red pepper flakes
Sprinkle both sides of chicken breasts with pepper and place in a crock pot. Combine the remaining ingredients and pour over chicken. Cook at LOW for 3-4 hours or till chicken is done. (Mine was done in 3 1/2 hours.) Serve over rice.





















I always feel better when I am not alone in my million plus one undone things in the house. I actually had amazing inspiration this week (actually two days) and was able to finish some of those projects, much like yours. The chicken looks amazing and think I will try it when I return home. I made this last night for my family and they loved it. My picky 9 year old who eats like a bird even when she likes the food, ate two whole chicken breasts! My husband said he loved it and if I made it a bit spicier it would taste like it came from his favorite oriental restaurant. I'm sure I will be making it again real soon and I'll have to share it on my blog and link back next time. I would have done it this time but I was already eating the sauce with a spoon before I even had dinner made, and just couldn't be bothered to take photos of it before I got to eat.

Made a dish last night that was nearly identical to this one. My son, who is a fairly picky eater, said "it's a do-over!" I accidentally threw away my recipe and couldn't find it online … but this one is the closest I've found! Thank you so much for providing it! Tip: cut up the chicken into "chunks" after cooking then recombine with the sauce. The cut up pieces soak up the sauce nicely! This is an easy meal for us on-the-go families.
