Cherry Chocolate Chip Muffins
Yield: 15 to 18 muffins
  • 1 1/3 cups flour
  • 1 cup granola
  • 1/3 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup oil
  • 1 tsp vanilla
  • 1/2 cup chopped almonds, toasted
  • 1/3 cup semi sweet chocolate chips
  • 1/2 cup chopped maraschino cherries
  1. Combine dry ingredients in large bowl. Beat together egg, buttermilk, oil and vanilla in a small bowl. Add to dry ingredients with nuts and chips. Stir just till moistened. Fold in cherries gently.
  2. Fill greased or paper lined muffin tins 3/4 full. Bake at 350° for about 15 minutes. Cool in pans for about 5 minutes before removing to cooling racks.
