Chocolate Chip Zucchini Bread

Here is another recipe for zucchini. This is just a basic zucchini bread that is a little healthier than some I’ve tried. I figure if a muffin calls for just as much sugar as flour, it’s not really a muffin, it’s just a bald cupcake. 🙂 I found this recipe on Allrecipes. I used a little less oil and substituted some of the flour with whole wheat flour. I’ve already made this twice and both times it was devoured by my family. You could make it without the chocolate chips, but they sure do make it extra yummy!

Chocolate Chip Zucchini Bread

1 1/2 cups flour
3/4 cup sugar
1 tsp soda
1 tsp cinnamon
1/2 tsp salt
1 egg
1/3 cup oil
1/4 cup milk
1 Tbsp lemon juice
1 tsp vanilla
1 cup shredded zucchini
1/4-1/2 cup chocolate chips
1/4 cup chopped nuts (optional)
Mix together the dry ingredients. Whisk egg, oil, milk, lemon juice, and vanilla. Stir gently into dry ingredients with zucchini, chips, and nuts. Pour batter into well greased loaf pan(s). I used 3 mini pans and baked them at 325 for about 30-40 minutes.
For a large loaf: bake at 325° for about 55 minutes.
For muffins, bake at 350° for about 20 minutes.

-The original recipe called for 1/2 cup of oil.
-I line my loaf pans with parchment paper just to make sure the bread doesn’t stick. If you don’t have parchment paper, make sure you grease the pans with shortening and then flour them.
