Ingredients
  

  • cup soft butter
  • ¾ cup sugar
  • 2 eggs
  • 1 cup finely chopped apple about 1 large
  • 1 tsp vanilla
  • ½ tsp almond extract
  • 1 ½ cups flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 2-3 Tbsp sugar for tops of muffins
  • ¼ cup sliced almonds

Instructions
 

  • Beat butter and sugar in a large mixing bowl till fluffy. Beat in the eggs, vanilla, and almond extract. Stir in the chopped apple.
  • Whisk together flour, baking powder, and salt in a small bowl. Add to the wet ingredients and stir gently till just combined. Batter will be stiff.
  • Scoop batter into well greased muffin tins. Sprinkle tops of muffins with sugar and sliced almonds.
  • Bake at 375° for 15-18 minutes or till lightly browned.
