Peel or scrub potatoes and cut into 1/2" strips. Place in a large bowl and cover with cold water. Let sit for at least 30 minutes.
Preheat oven to 450 degrees.
Drain potatoes well and pat dry with paper towels or clean dish towels.
Add oil to potatoes and stir well till potatoes are thoroughly coated. Add seasonings and stir vigorously.
Spread potatoes onto baking sheets sprayed with non stick cooking spray. I like to use two baking sheets so the potatoes have plenty of space between them.
Bake at 450° for 15-20 minutes. Remove and flip potatoes. Bake for another 10-15 minutes or until crispy on the outside.
