Better Than Chipotle Rice

Flavorful rice with cilantro, lime, green chilies, garlic, and onion. A perfect Mexican side dish that tastes amazing all on its own!

Ingredients
  

  • 2 ¼ cups white rice rinsed (I use long grain rice.)
  • 2 ¼ cups chicken broth
  • 1 ½ Tbsp salted butter
  • ¼ cup finely chopped fresh cilantro
  • 1 4 oz can diced green chilies
  • 1 ½ tsp garlic salt
  • 1 Tbsp dry minced onion
  • 1 ½ tsp granulated sugar
  • 1 ½ tsp lime juice

Instructions
 

  • Finely chop the cilantro, discarding the thick stems.
  • Rinse the rice in cold water, drain well.
  • Pour rice, broth, butter, cilantro, green chilies, garlic salt, onion, sugar, and lime juice into a rice cooker. Select "white rice" setting and cook till done.
  • Stir to blend ingredients. Serve immediately.

Notes

For stovetop: Combine all ingredients in a large pot, adding an additional 2 cups of water. Bring to a boil over high. Turn heat to low, cover and simmer for 18-20 minutes. Remove from heat and let sit 5-10 minutes, then stir to blend ingredients. It will be more sticky and less fluffy than the rice cooker method.
