No one will want to skip breakfast when you serve this tasty breakfast casserole with sausage and hash browns! It's perfect for overnight guests and holiday breakfast.
16ozbag frozen hash brownsthawed (I use cubed, not shredded.)
1tspsalt
1tsppepper
2cupsshredded cheddar cheesedivided
4green onionssliced
½red pepperdiced
½green pepperdiced
10large eggs
1cupmilk
¼cupheavy cream
Instructions
Spray a 9x13" baking dish with cooking spray. Preheat your oven to 350 degrees.
Cook sausage in a large skillet over medium high heat, breaking into small pieces. Drain off any fat.
Spread the thawed hash browns in the prepared pan. Sprinkle with salt and pepper.
Add the sausage and stir them together just a bit. Spread just 1 1/2 cups of the cheese over the top.
Next layer on the green onions, red pepper, and green pepper.
In a mixing bowl, whisk together the eggs, milk, and cream. Pour over the top of the casserole.
Cover with foil and bake for 50-60 minutes or until eggs are set.
Sprinkle the remaining 1/2 cup of cheese on top; bake uncovered for 5-10 minutes just until cheese melts.
Notes
I like to reserve some of the green onions to use as garnish.
Baking time will vary depending on how cold your hash browns are.
After covering with foil, you can refrigerate the casserole and bake the next morning. Let it sit at room temperature while your oven is preheating. Keep in mind that it may take longer to bake after being chilled.
