Ingredients
  

  • 2 ¼ cups flour
  • 2 ½ tsp baking powder
  • 2 tsp sugar
  • ¾ tsp baking soda
  • 1 tsp salt
  • 6 Tbsp very cold or frozen butter
  • 1 ½ cups grated cheddar cheese
  • 3 bacon strips cooked till crispy and crumbled
  • 2 green onions sliced (optional)
  • 1 cup buttermilk
  • 1 Tbsp melted butter for tops

Instructions
 

  • Combine flour, baking powder, sugar, soda, and salt in a large mixing bowl. Grate in the butter. (Or you can cut it in with a pastry blender.)
  • Stir in cheese, bacon, and green onions if desired. Add buttermilk and stir lightly till just moistened. Drop by large spoonfuls onto a greased cookie sheet.
  • Bake at 425° for 15-17 minutes. Brush with melted butter while still hot.
