Cut chicken into bite sized pieces. Brown over medium-high heat with the oil in a large skillet for about 4 minutes. Add the diced onion and cook for another 4 minutes.
Add garlic, curry, salt, pepper, uncooked rice, and chicken broth. Bring to a boil, cover, and simmer over medium heat for about 12 minutes, stirring occasionally.
Wash and chop the broccoli while the rice cooks. Stir the broccoli into the hot rice mixture. Cover and cook for another 4-5 minutes, stirring once, until the broccoli and rice are tender.
Stir in the parmesan cheese, then sprinkle the shredded cheese over the top. Turn to the lowest heat and cook, covered, for 2-3 minutes, or until the cheese is melted.
