You don't need eggs for this delicious chocolate cake, and there's a reason it's been popular for decades! Simple chocolate frosting makes it a perfect cake for chocolate lovers.
1cuphot water(not boiling, just warm or hot tap water)
Chocolate Buttercream Frosting
½cupsalted butter, softened to room temperature
⅓cupcocoa powder
⅛teaspoonsalt
3cupspowdered sugar
½teaspoonvanilla extract
5Tablespoonsmilk,more or less as needed
Instructions
Preheat your oven to 350 degrees. Spray a 9x13" pan with cooking spray.
In a large bowl, whisk together the flour, sugar, cocoa powder, and baking soda. Add the mayo, vanilla, and hot water. Whisk until smooth.
Pour the cake batter into the prepared pan. Bake at 350° for 25-30 minutes, or until a cake tester or toothpick comes out with no wet batter. (Moist crumbs are fine.)
Place the pan on a wire rack and let it cool completely.
For frosting: Beat the butter and cocoa powder until no lumps remain. Add the powdered sugar, vanilla, and 4 tablespoons of the milk. Beat until smooth, adding more milk as needed to get a creamy consistency.
Spread the frosting on the cooled cake. Cut into slices and serve, or cover with plastic wrap and store at room temperature.
Notes
For best results, use full-fat mayonnaise. I use Best Foods.
This cake works best in a metal cake pan; it tends to bake more evenly than when I use a glass pan. But if all you have is a glass pan, it's fine!
Leftover cake can be stored in an airtight container at room temperature for 3-4 days.
