Blend eggs, buttermilk, milk, oil, and vanilla. Whisk in dry ingredients just till moistened. Don't over mix or the pancakes will be tough. (It's OK if there are a few lumps.)
Let sit for 10-15 minutes, then cook in a medium hot griddle.
To make snowmen: Pour a circle of batter in the lower half of a medium hot skillet. Make a smaller circle just on top, so that the batter just barely touches. Cook till bubbles form, then flip and cook the second side.
Spread a scoop of whipped cream on a serving plate. Top with the snowman pancake, then decorate as desired. I used a scissor to cut the end of a piece of licorice to make it look more like a scarf.
I thought the pancakes were plenty sweet with the whipped cream, but you could certainly add syrup.
