Easy and addicting sugar cinnamon roasted almonds made in the oven.

- 1 egg white
- 1 tsp water
- 1 tsp vanilla
- 4 cups whole almonds
- ¼ cup brown sugar
- ¼ cup sugar
- 1 tsp salt
- 1 tsp cinnamon
Preheat oven to 250 degrees. Line a cookie sheet with parchment paper or a silicone liner; set aside.
Beat egg white, water, and vanilla in large bowl till frothy. (I like to use a glass bowl.) Stir in almonds.
Mix sugars, salt, and cinnamon and sprinkle over. Stir till almonds are well coated.
Pour coated almonds onto prepared baking sheet.
Bake at 250° for 60-90 minutes, stirring occasionally. You want the almonds to be toasted, but don’t let them burn!
