Three meats, potatoes, beans, and colorful vegetables all simmered in a smoky, savory broth that has just a bit of a kick. There's a reason home cooks have loved cowboy soup for generations!
15ouncecan red kidney beans, drained(or other beans)
1cupsweet corn
3cupsbeef broth
3slicesbacon, cooked & crumbled
Instructions
Slice the smoked sausage. (I also like to cut it in half so it's easier to eat.) Brown in a large pot over medium-high heat. Set aside.
In the same pot, cook the ground beef until completely browned. While the meat is cooking, wash and chop the vegetables.
Add the onion to the pot; cook for 4-5 minutes, stirring occasionally.
Stir in the minced garlic, chili powder, cumin, paprika, salt, pepper, and Worcestershire sauce. Saute for about a minute, or until fragrant.
Add the cooked sausage and all the remaining ingredients except the bacon. Bring to a boil, then turn the heat down to medium-low heat. Simmer for about 30 minutes, or until the vegetables are tender.
Stir in the bacon just before serving.
Notes
Leftover stew can be transferred to an airtight container and stored in the refrigerator for 4-5 days.
To prepare in a crock pot, cook the meat, onion, and seasonings as directed through step #4. Transfer to a crockpot and use some of the broth to scrape every last bit from the pan. Add remaining ingredients and cook on HIGH for 3-4 hours or LOW for 5-6 hours.
