Optional toppings - shredded lettucediced tomatoes, green onions, sour cream, black olives, guacamole
Instructions
Spray a 9x13" pan with cooking spray; set aside.
For sauce: Bring all ingredients to a boil in a small saucepan over medium heat. Reduce heat and simmer 15 minutes uncovered.
For filling: Brown ground beef in large skillet over medium-high heat; drain off excess grease. Add 1/3- 1/2 cup of the sauce, black beans, and cheese. Heat through.
Spread a thin layer of sauce in the bottom of the pan.
Place about 1/3 cup meat mixture down the center of each flour tortilla. Roll up and place seam side down in the prepared baking dish.
Pour the remaining enchilada sauce over the top of the enchiladas, then sprinkle with the rest of the cheese.
Cover with foil and bake at 350° for 20-30 minutes or till hot and bubbly.
