Easy Beef and Bean Enchilada Recipe

Ingredients
  

Red Enchilada Sauce:

  • 2 8 oz cans tomato sauce
  • 1 ½ cans water use the emptied tomato sauce cans
  • ¼ cup taco seasoning 1 packet

Filling:

  • 1 pound lean ground beef
  • ½ cup of the enchilada sauce
  • 15 ounce can black beans drained
  • ½ cup grated cheddar cheese

Additional ingredients:

  • 8 flour tortillas (8" tortillas_
  • 1 ½ cups grated cheddar cheese
  • Optional toppings - shredded lettuce diced tomatoes, green onions, sour cream, black olives, guacamole

Instructions
 

  • Spray a 9x13" pan with cooking spray; set aside.
  • For sauce: Bring all ingredients to a boil in a small saucepan over medium heat. Reduce heat and simmer 15 minutes uncovered.
  • For filling: Brown ground beef in large skillet over medium-high heat; drain off excess grease. Add 1/3- 1/2 cup of the sauce, black beans, and cheese. Heat through.
  • Spread a thin layer of sauce in the bottom of the pan.
  • Place about 1/3 cup meat mixture down the center of each flour tortilla. Roll up and place seam side down in the prepared baking dish.
  • Pour the remaining enchilada sauce over the top of the enchiladas, then sprinkle with the rest of the cheese.
  • Cover with foil and bake at 350° for 20-30 minutes or till hot and bubbly.
  • Serve hot with garnishes on the side.
