Easy Cheesy Potatoes Recipe

Tender potatoes cooked in cream and topped with gooey cheese. Using hash browns makes this the easiest potato recipe ever!

Ingredients
  

  • 32 oz bag of cubed frozen hash brown potatoes, thawed
  • 1 ¾ cups half & half cream
  • 1 ½ tsp salt
  • ½ tsp black pepper
  • 2 cup grated cheddar cheese

Instructions
 

  • Let the hash browns thaw for several hours in the fridge, or for 2-3 hours at room temperature.
  • Preheat your oven to 350 degrees. Spray a 9x13" pan with cooking spray.
  • Spread the hash browns in the prepared baking dish. Sprinkle the salt and pepper evenly over the top of the potatoes, then add the half and half.
  • Cover the dish with aluminum foil and bake 350° for 45-55 minutes, or until the edges are bubbly and most of the liquid has evaporated.
  • Sprinkle the cheese over the top, replace the foil and bake for about 5 minutes, or until the cheese melts.

Notes

  • If you forget to thaw the hash browns, no worries. Just increase the cooking time for a few minutes. 
  • Instead of hash browns, you can use 2 pounds of russet potatoes. Simply peel or scrub them and cut into cubes, slices, or strips. 
  • For the best melty, gooey cheese, use freshly grated cheese. The preshredded cheese is coated with powder, so it doesn't melt quite as well.
