Cook the bacon until crispy; drain on paper towels. I like to use the precooked bacon from Costco and just cook it for a couple minutes to crisp it up.
Wipe out your skillet and turn it to low or medium low heat.
On one slice of bread, place an ounce of cheese, 3 slices of bacon, then another ounce of cheese. Top with another slice of bread.
Spread 1 1/2 tsp of butter on the outside of the top slice of bread. Place butter side down in the warm skillet. Spread another 1 1/2 tsp of butter on the outside of the top piece of bread.
Repeat steps 3-4 for the other sandwich (or for as many as you are making).
Cook for 3-4 minutes, or until the bread is lightly toasted. I like to add a lid for the first 2-3 minutes to help the cheese melt.
Carefully flip the sandwiches and cook for another 3-4 minutes or until the bread is toasted and the cheese is melted and starting to ooze out.
Cut sandwiches in half and serve immediately. Enjoy!
Notes
If I'm using raw bacon, I like to bake it in the oven at 400° for about 20 minutes on a cooling rack placed in a rimmed cookie sheet.
Feel free to use any type of cheese you love, or a combination of cheeses.
