Grilled Cheese with Bacon

It doesn't get much easier than this grilled bacon and cheese sandwich. Perfect for lunch, dinner, or game night!

Ingredients
  

  • 4 slices white bread (2 ounces each)
  • 2 Tbsp salted butter
  • 6 slices bacon cooked until crispy
  • 4 ounces cheddar cheese sliced

Instructions
 

  • Cook the bacon until crispy; drain on paper towels. I like to use the precooked bacon from Costco and just cook it for a couple minutes to crisp it up.
  • Wipe out your skillet and turn it to low or medium low heat.
  • On one slice of bread, place an ounce of cheese, 3 slices of bacon, then another ounce of cheese. Top with another slice of bread.
  • Spread 1 1/2 tsp of butter on the outside of the top slice of bread. Place butter side down in the warm skillet. Spread another 1 1/2 tsp of butter on the outside of the top piece of bread.
  • Repeat steps 3-4 for the other sandwich (or for as many as you are making).
  • Cook for 3-4 minutes, or until the bread is lightly toasted. I like to add a lid for the first 2-3 minutes to help the cheese melt.
  • Carefully flip the sandwiches and cook for another 3-4 minutes or until the bread is toasted and the cheese is melted and starting to ooze out.
  • Cut sandwiches in half and serve immediately. Enjoy!

Notes

  • If I'm using raw bacon, I like to bake it in the oven at 400° for about 20 minutes on a cooling rack placed in a rimmed cookie sheet.
  • Feel free to use any type of cheese you love, or a combination of cheeses.
