Ground Beef & Broccoli Stir Fry

Ingredients
  

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 3 cloves fresh garlic minced

Sauce Ingredients:

  • ¾ cup beef broth
  • cup soy sauce
  • 8 cups fresh broccoli florets
  • ¼ tsp black pepper
  • 1 tsp ground ginger or a tablespoon fresh ginger
  • ¼ cup brown sugar
  • 1 tsp sesame oil
  • pinch of red pepper flakes
  • 2 Tbsp cornstarch + 1/2 cup cold water

Instructions
 

  • Wash broccoli and cut into bite sized pieces. Dice the onion.
  • In a large skillet with deep sides, brown the ground beef and onion over medium-high heat. Drain off excess fat.
  • Add garlic and saute for about a minute.
  • Stir in the beef broth, soy sauce, and broccoli. Turn the heat down to medium. Cover and cook for 4 minutes, stirring a couple of times.
  • Stir in the pepper, ginger, brown sugar, oil, and red pepper flakes.
  • Whisk together the cornstarch and cold water. Add to the skillet and cook for 2-3 minutes, or until the broth thickens and turns clear.
  • Serve hot over fluffy white rice. Garnish with sesame seeds if desired.

Notes

-I make about 3 cups of rice to serve with this dish. You may want more or less. Rice is not included in the nutrition information.
