Ingredients
  

  • 1 pound lean ground beef
  • 1 onion, diced
  • 1 cup celery, sliced
  • 2 cloves garlic, minced
  • ½ tsp black pepper
  • 1 ½ Tablespoons soy sauce
  • 10.5 ounce can cream of mushroom soup (or cream of chicken soup)
  • ½ cup dry long grain rice
  • 1 cup hot water (or beef broth)
  • 2 cups coleslaw mix
  • 1 cup crunchy chow mein noodles

Instructions
 

  • Spray a 9x13" baking dish with cooking spray. Preheat your oven to 350°.
  • Cook the ground beef in a large skillet over medium-high heat for 5-7 minutes. Add the diced onion and cook for another 3-4 minutes.
  • Add the celery, garlic, pepper, soy sauce, soup, dry rice, and water. Stir until combined.
  • Spread the beef mixture into the prepared pan. Cover the pan with foil and bake at 350 degrees for 40 minutes.
  • Carefully remove the dish from the oven and stir in the coleslaw mix. Re-cover and bake for another 20 minutes.
  • Serve hot and top each serving with crunchy noodles.

Notes

  • If your casserole seems too dry, you can stir in a few tablespoons water before serving.
  • Leftovers can be stored in the refrigerator in an airtight container for 3-4 days. Reheat in the microwave, then add the chow mein noodles.
