Ingredients

  • 1 pound lean ground beef
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 6 cups beef broth
  • 14.5 oz can diced tomatoes with juice
  • 1 Tbsp worcestershire sauce
  • 1 Tbsp granulated sugar or brown sugar
  • ½ tsp oregano
  • ½ tsp basil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 ½ cups dry macaroni noodles
  • 1 ½ cups frozen mixed vegetables

Instructions

  • In a large soup pot, brown the ground beef and onion over medium-high heat. Add garlic and cook another minute. Drain off any excess fat.
  • Add the broth, diced tomatoes, Worcestershire, sugar, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat to medium. Simmer for 5 minutes.
  • Add the macaroni and simmer for about 8 minutes, or until noodles are tender.
  • Add the veggies and heat through. Taste and add salt or additional seasonings if desired.

Notes

-Sugar may seem like a strange ingredient in soup, but it helps cut the acidity of the tomatoes.
