Let butter soften at room temperature for a couple of hours.
Combine softened butter, honey, vanilla, and powdered sugar in a small bowl.
Using a hand mixer, beat the ingredients on low until well combined, scraping the sides of the bowl with a rubber spatula.
Whip for 1-2 minutes more at medium speed, until it has reached a fluffy texture. Serve at room temperature.
Leftover honey butter will keep in the refrigerator in an airtight container for a couple of weeks. Let it come to room temperature and beat it again before serving.
