Ingredients
  

  • 1 ½ cups all purpose flour
  • 1 cup quick oats
  • 1 Tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 ½ cups milk
  • 6 Tbsp melted butter
  • 2 Tbsp brown sugar
  • 1 tsp vanilla extract

Instructions
 

  • Whisk together the flour, oats, baking powder, and salt in a mixing bowl. Set aside.
  • In another bowl, whisk together the eggs, milk, melted butter, brown sugar, and vanilla till brown sugar is mostly dissolved.
  • Add the wet mixture to the flour mixture, lightly whisk till just combined. Cook in a waffle iron till lightly browned.

Notes

If you only have regular oats, blend them up a bit in a blender or food processor.
