These lightly spiced pumpkin pancakes are extra tasty served with homemade cinnamon syrup!

Ingredients
  

  • 1 ¾ cups milk
  • 2 Tbsp white vinegar
  • 1 cup canned pumpkin
  • 1 egg
  • 2 Tbsp canola oil
  • 2 cups all purpose flour I use half whole wheat flour
  • 3 Tbsp brown sugar
  • 2 tsp baking powder
  • 1 tsp soda
  • 2 tsp cinnamon
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • ½ tsp salt

Instructions
 

  • Whisk milk, vinegar, pumpkin, egg, and oil till smooth.
  • Combine dry ingredients and add. Whisk just till blended, batter will have small lumps.
  • Bake on skillet heated to medium low heat.
  • Serve with cinnamon syrup.
