Raspberry Cherry Crunch

Ingredients
  

Topping:

  • 1 cup oats
  • 1 cup brown sugar
  • ½ cup flour
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ cup soft butter

Filling:

  • ¼ cup sugar
  • 1 Tbsp cornstarch
  • 2 cups fresh or frozen raspberries
  • 16 oz bag frozen cherries

Instructions
 

  • Mix all topping ingredients in a mixing bowl till crumbly.
  • Press half of crumbs into a deep dish pie plate. Bake at 375° for 5-7 minutes.
  • Prepare filling while crust is baking. Combine sugar and cornstarch in a heavy saucepan. Stir in fruit.
  • Cook and stir over medium high heat till thick and bubbly. Pour over the partially baked crust. Top with remaining oat mixture.
  • Bake for about 20-25 minutes, or until topping is lightly browned.
  • Serve with a scoop of vanilla ice cream for a perfect summer dessert.
