Topping:
- 1 cup oats
- 1 cup brown sugar
- ½ cup flour
- 1 tsp cinnamon
- ½ tsp salt
- ½ cup soft butter
Filling:
- ¼ cup sugar
- 1 Tbsp cornstarch
- 2 cups fresh or frozen raspberries
- 16 oz bag frozen cherries
Mix all topping ingredients in a mixing bowl till crumbly.
Press half of crumbs into a deep dish pie plate. Bake at 375° for 5-7 minutes.
Prepare filling while crust is baking. Combine sugar and cornstarch in a heavy saucepan. Stir in fruit.
Cook and stir over medium high heat till thick and bubbly. Pour over the partially baked crust. Top with remaining oat mixture.
Bake for about 20-25 minutes, or until topping is lightly browned.
Serve with a scoop of vanilla ice cream for a perfect summer dessert.
