Sausage Lentil Stew Recipe

Ingredients
  

  • 1 pound Jimmy Dean pork sausage
  • 1 onion diced
  • 1 green pepper diced
  • 1 red pepper diced
  • 4 cloves garlic minced
  • 1 ½ tsp cumin
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp sugar
  • 8 oz tomato sauce
  • 6 cups low sodium chicken broth
  • ¼ cup vinegar
  • 1 pound lentils rinsed
  • 1 ½ pounds russet potatoes peeled and diced (2 large)

Instructions
 

  • In a large pot, brown the sausage over medium-high heat. Drain off any excess fat. 
  • While the sausage is cooking, dice the onion and bell peppers. Add them to the pot and cook over medium heat for 2-3 minutes. 
  • Stir in the garlic, cumin, sugar, salt, pepper, tomato sauce, lentils, broth, and vinegar. Bring to a boil and simmer for 10 minutes. 
  • In the meantime, peel and dice the potatoes. Add them to the pot and simmer for an additional 20 minutes, or until the potatoes and lentils are tender. If it starts splattering, turn the heat down to medium low.

Notes

  • Instead of brown lentils, you can use green lentils, or even red lentils. Just keep in mind that red lentils cook faster, so you will have to adjust the cooking time.
