Ingredients
  

Salad

  • 6 oz bag spinach
  • 1 cup sliced celery
  • 3 green onions sliced
  • 6 strips bacon cooked and crumbled
  • 3 hard boiled eggs diced
  • 1 cup shredded mozzarella cheese

Poppy Seed Dressing

  • 6 Tbsp vegetable oil
  • 2 ½ Tbsp sugar
  • 2 ½ Tbsp white vinegar
  • ½ tsp salt
  • 1 ½ tsp poppy seeds
  • 2 drops mustard

Instructions
 

  • Cook bacon till very crispy; drain on paper towels. Crumble and set aside.
  • Prepare dressing. Whisk together oil, sugar, vinegar, salt, poppy seeds, and mustard in a small bowl till sugar dissolves. Set aside.
  • Slice celery, and green onions.
  • Toss spinach, celery, and green onions in an a large salad bowl. Top with mozzarella cheese, diced eggs, and bacon.
  • Serve salad with dressing on the side, or add dressing just before serving and stir till salad is well coated.
