Tasty spinach salad with bacon, eggs, celery, cheese, and homemade poppy seed dressing.

Salad
- 6 oz bag spinach
- 1 cup sliced celery
- 3 green onions sliced
- 6 strips bacon cooked and crumbled
- 3 hard boiled eggs diced
- 1 cup shredded mozzarella cheese
Poppy Seed Dressing
- 6 Tbsp vegetable oil
- 2 ½ Tbsp sugar
- 2 ½ Tbsp white vinegar
- ½ tsp salt
- 1 ½ tsp poppy seeds
- 2 drops mustard
Cook bacon till very crispy; drain on paper towels. Crumble and set aside.
Prepare dressing. Whisk together oil, sugar, vinegar, salt, poppy seeds, and mustard in a small bowl till sugar dissolves. Set aside.
Slice celery, and green onions.
Toss spinach, celery, and green onions in an a large salad bowl. Top with mozzarella cheese, diced eggs, and bacon.
Serve salad with dressing on the side, or add dressing just before serving and stir till salad is well coated.
