Ingredients

Meatballs:

  • 1 ½ pounds lean ground beef
  • cup cracker crumbs I use saltines
  • 2 Tbsp dry minced onion
  • 1 egg
  • 1 ½ tsp salt
  • ¼ cup milk

Sauce:

  • 2 Tbsp cornstarch
  • ½ cup brown sugar
  • cup vinegar
  • 1 Tbsp soy sauce
  • 1 20 oz can pineapple chunks - save juice
  • 1 green pepper sliced or diced

Instructions

  • Combine all meatball ingredients in a large bowl and mix well. Shape into balls and place on a greased cookie sheet. I like to use a cookie scoop so they all turn out the same size.
  • Bake at 400° for about 15-20 or until brown.
  • For sauce: Mix cornstarch and sugar in a large pan. Whisk in vinegar, soy sauce, and pineapple juice. Cook and whisk till thickened and boil for 1 minute.
  • Add meatballs, and pineapple and heat through. Add green peppers just before serving. Serve over rice.
