Amazing Guacamole Recipe with Rotel

Ingredients
  

  • 4 ripe avocados finely diced or mashed
  • 1 10 oz can Rotel well drained
  • 2 green onions
  • ¼ cup chopped cilantro
  • ¼ tsp garlic salt or up to 1/2 teaspoon
  • 1 ½ tsp fresh lime juice

Instructions
 

  • Slice the green onions and chop the cilantro. Juice the lime.
  • Cut the avocados and remove the pits. Place them in a medium bowl and mash with a pastry blender or large fork. It's fine to leave some chunks.
  • Add the drained Rotel, the green onions, cilantro, garlic salt, and lime juice. Stir until blended.
  • Taste and add additional garlic salt if desired. I usually use the full 1/2 teaspoon.
  • Serve with tortilla chips or as a side dish with any Mexican meal.

Notes

-I've used both mild and original Rotel, use whichever one you prefer.
