4
ripe avocados
finely diced or mashed
1 10
oz
can Rotel
well drained
2
green onions
¼
cup
chopped cilantro
¼
tsp
garlic salt
or up to 1/2 teaspoon
1 ½
tsp
fresh lime juice
Instructions
Slice the green onions and chop the cilantro. Juice the lime.
Cut the avocados and remove the pits. Place them in a medium bowl and mash with a pastry blender or large fork. It's fine to leave some chunks.
Add the drained Rotel, the green onions, cilantro, garlic salt, and lime juice. Stir until blended.
Taste and add additional garlic salt if desired. I usually use the full 1/2 teaspoon.
Serve with tortilla chips or as a side dish with any Mexican meal.
Notes
-I've used both mild and original Rotel, use whichever one you prefer.
