It takes less than 10 minutes to whip up this Guacamole with Rotel, and it is always devoured! The diced tomatoes and green chilies add so much flavor, and it is such a time saver not having to chop them yourself!
I got this easy guacamole recipe from a friend decades ago, and we’ve never had guacamole anywhere that we like as much as this one. It is simply divine!

I don’t think you can ever go wrong with a creamy bowl of guacamole. Not only is it the perfect dish to take to a party, it makes a great snack any time of day.
This version is easier than most thanks to a can of Rotel diced tomatoes & green chilies. Not only does it add incredible flavor, the acid from the tomatoes helps slow down the browning process. Bonus!
Don’t judge, but I’ve been known to eat this guacamole for lunch with a side of chips and call it good. But when I have the time and ingredients on hand, I love it with quesadillas. So tasty!
I swear once you try this guacamole recipe with Rotel, you won’t want to make it any other way. It was life changing at our house!
If you are serving a crowd, you may want to double the recipe. I’ve seen people obliterate a large bowl in just minutes!
Guacamole Recipe with Rotel
- PREP – Chop the cilantro, slice the green onions, and juice the lime.
- AVOCADOS – Slice the avocados and remove the pits. Scoop into a bowl. Mash avocados with a fork or pastry blender.
- COMBINE – Mix avocados with drained Rotel, green onions, cilantro, garlic salt, and lime juice. Taste and add more garlic salt if needed.
- SERVE – Serve with tortilla chips or use as a side dish. Guacamole is best served immediately because it starts to turn brown fairly quickly.

How to store:
If you do happen to have leftover guacamole, spoon it into the smallest airtight container it will fit in. Press a piece of plastic wrap right onto the top of the guacamole, then add the lid. Store in the refrigerator for a day or two.
You can skim off the top layer that has turned browned, then just stir and serve.
PRO TIPS FOR THE BEST HOMEMADE GUACAMOLE
- Use ripe avocados that have dark skin and are slightly soft when you squeeze them. I usually have to buy mine a few days ahead and let them ripen on the counter, because they are always rock hard at the store.
- Make sure you drain the Rotel really well, or your guacamole will be watery.
- A pastry blender works perfectly for mashing avocadoes!
ROTEL GUACAMOLE VARIATIONS:
- Sometimes I add finely diced Roma tomatoes to the guacamole.
- In a pinch, you can use lemon juice to help keep the avocadoes from browning, but it doesn’t give the same great flavor as lime juice.
- Adjust the amount of heat with the variety of Rotel you use. I like the original, but some of my kids can’t handle the heat, so I usually use mild Rotel.

Amazing Guacamole Recipe with Rotel

A can of Rotel makes this the best and easiest guacamole ever!
Ingredients
- 4 ripe avocados, finely diced or mashed
- 1 10 oz can Rotel, well drained
- 2 green onions
- 1/4 cup chopped cilantro
- 1/4 tsp garlic salt (or up to 1/2 teaspoon)
- 1 1/2 tsp fresh lime juice
Instructions
- Slice the green onions and chop the cilantro. Juice the lime.
- Cut the avocados and remove the pits. Place them in a medium bowl and mash with a pastry blender or large fork. It's fine to leave some chunks.
- Add the drained Rotel, the green onions, cilantro, garlic salt, and lime juice. Stir until blended.
- Taste and add additional garlic salt if desired. I usually use the full 1/2 teaspoon.
- Serve with tortilla chips or as a side dish with any Mexican meal.
Notes
-I've used both mild and original Rotel, use whichever one you prefer.
