- 2 ½ cups all purpose flour
- 1 cup sugar
- 1 ½ tsp cinnamon
- ½ tsp nutmeg
- dash cloves
- ½ tsp ginger
- ½ tsp salt
- 1 tsp baking soda
- 1 cup canned pumpkin
- ¼ cup applesauce
- ¼ cup vegetable oil
- 2 eggs
- 2 cups diced apples
- ½ cup Craisins optional
- ½ cup chopped pecans optional
Spray two muffin pans with non stick cooking spray; set aside. Preheat oven to 350 degrees.
Whisk together flour, sugar, cinnamon, nutmeg, cloves, ginger, salt, and baking soda in a large bowl.
Peel and dice the apples.
Mix pumpkin, applesauce, oil, and eggs in a small bowl.
Add to dry ingredients with apples, craisins, and nuts.
Fill prepare muffin cups.
Bake at 350° for about 18 minutes.
