Ingredients
  

  • 2 ½ cups all purpose flour
  • 1 cup sugar
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • dash cloves
  • ½ tsp ginger
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 cup canned pumpkin
  • ¼ cup applesauce
  • ¼ cup vegetable oil
  • 2 eggs
  • 2 cups diced apples
  • ½ cup Craisins optional
  • ½ cup chopped pecans optional

Instructions
 

  • Spray two muffin pans with non stick cooking spray; set aside. Preheat oven to 350 degrees.
  • Whisk together flour, sugar, cinnamon, nutmeg, cloves, ginger, salt, and baking soda in a large bowl.
  • Peel and dice the apples.
  • Mix pumpkin, applesauce, oil, and eggs in a small bowl.
  • Add to dry ingredients with apples, craisins, and nuts.
  • Fill prepare muffin cups.
  • Bake at 350° for about 18 minutes.
