Best Ever Gourmet Chicken Salad

Ingredients
  

  • 4 cups shredded chicken (or diced chicken)
  • 1 cup red grapes, halved
  • 1 cup diced celery (2-3 stalks)
  • 2 green onions, sliced
  • ½ cup roasted salted almonds, chopped (or cashews)

Dressing

  • ½ cup mayonnaise
  • ¼ cup ranch dressing
  • 2 Tbsp milk
  • tsp salt
  • tsp black pepper

Instructions
 

  • In a large bowl, combine the shredded chicken, grapes, celery, and green onions.
  • In a small bowl, whisk together the mayo, ranch dressing, milk, salt, and pepper.
  • Pour the dressing into the chicken mixture. Stir together until all the ingredients are well coated. Either serve immediately, or chill for a few hours, or overnight.
  • Just before serving, stir in the almonds. Serve on a sliced roll or crossaint, in a flour tortilla, or on a bed of lettuce.

Notes

  • You can store leftover chicken salad in an airtight container in the refrigerator for up to 5 days.
  • For meal prep, you can prepare the salad a few hours or even a day ahead of time. Just don't add the nuts until serving time, because the dressing makes them soft.
