How to Make Gourmet Chicken Salad
- Prepare the Chicken -I like to use shredded rotisserie chicken because it’s quick. But if I don’t have any, I sprinkle 3-4 chicken breasts with ranch dressing mix and cook them in olive oil in a skillet. (Just make sure the chicken is completely cooled before you use it.)
- Sauce –Whisk together the mayo, ranch dressing, milk, salt, and pepper.

- Combine – In a large bowl, stir together the chicken, grapes, celery, and green onions. Add the sauce and stir until well coated.

Don’t add the almonds until right before serving.
- Serve – You can either chill the chicken salad for 30 minutes, or serve it immediately. You can make it the day before and store it in the refrigerator.

- 4 cups shredded chicken (or diced chicken)
- 1 cup red grapes, halved
- 1 cup diced celery (2-3 stalks)
- 2 green onions, sliced
- ½ cup roasted salted almonds, chopped (or cashews)
Dressing
- ½ cup mayonnaise
- ¼ cup ranch dressing
- 2 Tbsp milk
- ⅛ tsp salt
- ⅛ tsp black pepper
Instructions
- In a large bowl, combine the shredded chicken, grapes, celery, and green onions.
- In a small bowl, whisk together the mayo, ranch dressing, milk, salt, and pepper.
- Pour the dressing into the chicken mixture. Stir together until all the ingredients are well coated. Either serve immediately, or chill for a few hours, or overnight.
- Just before serving, stir in the almonds. Serve on a sliced roll or crossaint, in a flour tortilla, or on a bed of lettuce.

- You can store leftover chicken salad in an airtight container in the refrigerator for up to 5 days.
- For meal prep, you can prepare the salad a few hours or even a day ahead of time. Just don’t add the nuts until serving time, because the dressing makes them soft.
