A bit of ranch dressing and a few tasty mix-ins make this gourmet chicken salad recipe the best ever! It’s perfect for lunches, picnics, or light dinners, and using rotisserie chicken makes it even easier to prepare.

I’ve tried several recipes for chicken salad over the years, but I always come back to this one. The ranch dressing gives it a flavor that just can’t be beat!

During the hot summer months, we have this salad often. It’s such a refreshing lunch or dinner! And every time I serve it at a bridal or baby shower, I get rave reviews. It really is delicious!

How to Make Gourmet Chicken Salad

  1. Prepare the Chicken -I like to use shredded rotisserie chicken because it’s quick. But if I don’t have any, I sprinkle 3-4 chicken breasts with ranch dressing mix and cook them in olive oil in a skillet. (Just make sure the chicken is completely cooled before you use it.)
  2. Sauce –Whisk together the mayo, ranch dressing, milk, salt, and pepper.
  3. Combine – In a large bowl, stir together the chicken, grapes, celery, and green onions. Add the sauce and stir until well coated.

  4. Serve – You can either chill the chicken salad for 30 minutes, or serve it immediately. You can make it the day before and store it in the refrigerator.

Chicken Salad Variations

  • I’ve made this chicken salad with almonds, cashews, and pecans. All are tasty, so use your favorite!
  • For a more tangy chicken salad, replace some of the mayo with nonfat Greek yogurt or sour cream.
  • Adjust creaminess by adding more mayonnaise or ranch dressing.
  • Want a tangier chicken salad? Add some Dijon mustard or apple cider vinegar to the sauce.
  • We love it with grapes, but it is also tasty with diced apple or dried cranberries.
  • If you don’t have rotisserie chicken, you can cut up cooked chicken breast into bite-sized pieces.

Ingredients
  

  • 4 cups shredded chicken (or diced chicken)
  • 1 cup red grapes, halved
  • 1 cup diced celery (2-3 stalks)
  • 2 green onions, sliced
  • ½ cup roasted salted almonds, chopped (or cashews)

Dressing

  • ½ cup mayonnaise
  • ¼ cup ranch dressing
  • 2 Tbsp milk
  • ⅛ tsp salt
  • ⅛ tsp black pepper

Instructions
 

  • In a large bowl, combine the shredded chicken, grapes, celery, and green onions.
  • In a small bowl, whisk together the mayo, ranch dressing, milk, salt, and pepper.
  • Pour the dressing into the chicken mixture. Stir together until all the ingredients are well coated. Either serve immediately, or chill for a few hours, or overnight.
  • Just before serving, stir in the almonds. Serve on a sliced roll or crossaint, in a flour tortilla, or on a bed of lettuce.

Notes

  • You can store leftover chicken salad in an airtight container in the refrigerator for up to 5 days.
  • For meal prep, you can prepare the salad a few hours or even a day ahead of time. Just don’t add the nuts until serving time, because the dressing makes them soft.
