- 4 slices bacon fried and crumbled
- 24 oz chicken breasts cut in bite sized pieces
- 2 stalks celery diced
- 1 onion chopped
- 4 large carrots diced
- 2 cloves garlic minced
- 1 cup frozen peas
- 1 cup frozen corn
- 3 Tbsp butter
- 6 cups cooked rice
- Salt and pepper
Cook the bacon in a large electric skillet over medium low heat. Remove bacon and set aside.
Salt and pepper chicken. Brown in the electric skillet with 1-2 Tbsp of the bacon oil over medium hot heat. Remove chicken from pan and set aside.
Saute celery, onion, and carrots over medium heat till crisp tender. (I sometimes add a small amount of water to the pan to speed the process along.)
Add the garlic and cook for another minute.
Stir in the frozen peas and corn; heat through.
Turn heat down to low and stir in butter, rice, bacon and cooked chicken. Mix all together and season with salt and pepper to taste.
