Ingredients
  

  • 4 slices bacon fried and crumbled
  • 24 oz chicken breasts cut in bite sized pieces
  • 2 stalks celery diced
  • 1 onion chopped
  • 4 large carrots diced
  • 2 cloves garlic minced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 3 Tbsp butter
  • 6 cups cooked rice
  • Salt and pepper

Instructions
 

  • Cook the bacon in a large electric skillet over medium low heat. Remove bacon and set aside.
  • Salt and pepper chicken. Brown in the electric skillet with 1-2 Tbsp of the bacon oil over medium hot heat. Remove chicken from pan and set aside.
  • Saute celery, onion, and carrots over medium heat till crisp tender. (I sometimes add a small amount of water to the pan to speed the process along.)
  • Add the garlic and cook for another minute.
  • Stir in the frozen peas and corn; heat through.
  • Turn heat down to low and stir in butter, rice, bacon and cooked chicken. Mix all together and season with salt and pepper to taste.
