Coconut Granola – this homemade granola is packed with hidden nutrition, but it is so tasty even the picky eaters will enjoy it!

- 3 cups regular oats
- 1 ½ cups sweetened flaked coconut
- ⅔ cups pumpkin seeds (pepitas)
- 1 cup sliced almonds
- 3 Tbsp chia seeds
- ¼ cup flax seeds, ground
- ½ cup pure maple syrup
- 3 Tbsp brown sugar
- ⅛ tsp salt
- ½ cup coconut oil
Combine oats, coconut, pumpkin seeds, almonds, chia seeds, and ground flax seed in a large mixing bowl. Toss lightly.
Melt maple syrup, brown sugar, salt, and coconut oil over low heat in a small saucepan. Pour over dry ingredients and stir till evenly coated.
Pour onto a lightly greased cookie sheet. Bake at 300° for 15 minutes. Stir, then bake for 15 more minutes. Let cool before serving.
