Ingredients
  

  • 3 cups regular oats
  • 1 ½ cups sweetened flaked coconut
  • cups pumpkin seeds (pepitas)
  • 1 cup sliced almonds
  • 3 Tbsp chia seeds
  • ¼ cup flax seeds, ground
  • ½ cup pure maple syrup
  • 3 Tbsp brown sugar
  • tsp salt
  • ½ cup coconut oil

Instructions
 

  • Combine oats, coconut, pumpkin seeds, almonds, chia seeds, and ground flax seed in a large mixing bowl. Toss lightly.
  • Melt maple syrup, brown sugar, salt, and coconut oil over low heat in a small saucepan. Pour over dry ingredients and stir till evenly coated.
  • Pour onto a lightly greased cookie sheet. Bake at 300° for 15 minutes. Stir, then bake for 15 more minutes. Let cool before serving.
