Ingredients
  

Crumb Topping

  • ½ cup all purpose flour
  • ½ cup sugar
  • ¼ cup salted butter, softened to room temperature

Peach Muffin Batter:

  • 2 ½ cups all purpose flour (about 12.5 ounces)
  • 2 ½ tsp baking powder
  • 1 tsp salt
  • 1 ¼ cups sugar
  • 2 large eggs
  • ¼ cup salted butter, melted
  • ¼ cup vegetable oil
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 1 ½ cups diced fresh peaches

Instructions
 

Crumble Topping:

  • Combine the flour, sugar, and soft butter in a small bowl. Mix with a fork or your fingers until you have even crumbs. Set aside.
  • Spray 18 muffin cups with cooking spray, or use paper liners. Peel and dice your peaches. Preheat your oven to 425°.

Peach Muffin Batter

  • Whisk together the flour, baking powder, and salt; set aside.
  • In a large bowl, whisk the sugar and eggs for about 2 minutes, then whisk in the eggs, melted butter, oil, buttermilk, vanilla, and almond extract.
  • Stir the flour mixture into the wet ingredients, then fold in the diced peaches.
  • Divide the batter between the 18 muffin cups. Sprinkle about a tablespoon of the crumbs on top of each muffin.
  • Bake the muffins at 425° for 10 minutes. TURN THE HEAT DOWN to 350° and bake for another 12-15 minutes, or until set in the middle and golden brown around the edges.
  • Let the muffins cool in the muffin pan for about 5 minutes, then carefully remove and place on a wire rack. Serve warm or at room temp.

Notes

  • If you don't have buttermilk, you can whisk together 1/2 cup of milk with 1/2 cup of sour cream, yogurt,  or Greek yogurt.
  • Muffins can be stored in an airtight container for 3-5 days. You can also freeze them for up to four months.
