Ingredients

Cookie Dough

  • ½ cup salted butter, softened to room temperature
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • ¼ tsp salt
  • 1 ⅓ cup all purpose flour (6.66 ounces)
  • ½ tsp baking soda
  • 1 cup chocolate chips

Brownie Batter

  • ½ cup salted butter, melted
  • cup cocoa powder
  • 1 cup white sugar
  • ¼ tsp salt
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ cup all purpose flour (2.5 ounces)

Instructions

  • Spray a 9x13" pan with cooking spray. Preheat your oven to 350°. (For easy removal and cleanup, you can line the pan with foil or parchment paper before spraying.)

Cookie Dough

  • In a large mixing bowl, beat the butter and sugars with an electric hand mixer for 2-3 minutes, or until lighter in color and fluffy. Beat in the vanilla, egg, and salt.
  • Add the flour, soda, and chocolate chips. (I like to reserve 2-3 Tbsp of chocolate chips to press on top after baking.) Stir until combined and set aside.

Brownie Batter

  • In a medium bowl, melt butter and add the cocoa powder; whisk until smooth. Then whisk in the sugar.
  • Add the salt, eggs, and vanilla; whisk for about a minute. Stir in the flour.

Assemble

  • Spread the brownie batter into the prepared pan. Take scoops of cookie dough and flatten them slightly. Place them on top of the brownie batter. Don't cover the batter completely, you want some of the brownie showing.
  • Cover the pan with aluminum foil and bake for 25 minutes on a lower oven rack. Remove the foil and bake for another 15-20 minutes, or until a toothpick inserted into a brownie section comes out with no wet batter.
  • If desired, press the reserved chocolate chips into the cookie sections.
  • Let cool for at least 20 minutes before serving. They will be easier to slice cleanly after they are completely cooled, but they are delicious warm!

Notes

  • Brownies can be stored in an airtight container at room temperature for up to a week. For maximum freshness, wrap them individually in plastic wrap. You can also freeze them for 4-6 months. Let thaw at room temp.
