Sweet, salty, crunchy, and chewy, this peanut butter cornflake candy is ridiculously easy and made in one pan. The whole family will love these easy treats!
Measure the cornflakes, set aside. Spread silicone liners or parchment paper on your table or countertop.
In a large saucepan, heat the corn syrup and sugar over medium heat until the sugar dissolves. Stir in the peanut butter, then the vanilla.
Remove the pan from the heat and gently stir the cornflakes into the peanut butter mixture.
Quickly drop by heaping spoonfuls onto the liners. (I use a 1 1/2 tablespoon cookie scoop.)
Let the candy cool at room temperature for 20-30 minutes or until set.
Notes
Spray your measuring cups with nonstick cooking spray, and the corn syrup and peanut butter will slide right out!
We like a higher ratio of sweet peanut butter to cornflakes for our candy. If you want a texture similar to no-bake cornflake cookies, add an additional 1-2 cups of cornflakes.
If you need your candy to set up in a hurry, place your silicone liners inside a cookie sheet and pop it in the fridge or freezer for a few minutes.
