Ingredients

  • 2 cups of cornflakes
  • ½ cup light corn syrup
  • ½ cup granulated sugar
  • ¾ cup creamy peanut butter
  • ½ tsp vanilla extract

Instructions

  • Measure the cornflakes, set aside. Spread silicone liners or parchment paper on your table or countertop.
  • In a large saucepan, heat the corn syrup and sugar over medium heat until the sugar dissolves. Stir in the peanut butter, then the vanilla.
  • Remove the pan from the heat and gently stir the cornflakes into the peanut butter mixture.
  • Quickly drop by heaping spoonfuls onto the liners. (I use a 1 1/2 tablespoon cookie scoop.)
  • Let the candy cool at room temperature for 20-30 minutes or until set.

Notes

  • Spray your measuring cups with nonstick cooking spray, and the corn syrup and peanut butter will slide right out!
  • We like a higher ratio of sweet peanut butter to cornflakes for our candy. If you want a texture similar to no-bake cornflake cookies, add an additional 1-2 cups of cornflakes.
  • If you need your candy to set up in a hurry, place your silicone liners inside a cookie sheet and pop it in the fridge or freezer for a few minutes.
