It doesn’t get much easier than this 5 ingredient peanut butter cornflake candy! Crunchy cornflakes are coated with an ooey gooey peanut butter mixture, then dropped by spoonfuls onto parchment.

People go crazy for this sweet treat, so you may want to make a double batch!

A perfect last-minute no bake dessert!

If you need a delicious treat for a bake sale, potluck, or even holiday trays, these candies are perfect! They’re ready in minutes, and everyone loves them.

And don’t worry, unlike most candy recipes, you don’t need a candy thermometer. Even beginning cooks can make them!

How to make cornflake candy with peanut butter

  1. PREP – Set out silicone liners or parchment in cookie sheets or on your counter. Measure the cornflakes.
  2. SUGAR MIXTURE –  Combine corn syrup and sugar in a large saucepan or pot. Cook over medium or medium-high heat until the sugar melts.
  3. COMBINE – Stir in the peanut butter, then the vanilla. Carefully stir in the cornflakes. process shots - how to make peanut butter cornflake candy
  4. FORM – Quickly spoon mixture by tablespoonfuls onto the silicone liners. (I like to use a cookie scoop.) As it cools, it will set up.

Store candy in an airtight container for up to a week. They’re pretty sticky, so I recommend placing wax paper between the layers.

PRO TIPS:

  • If you use chunky peanut butter, you will need a full cup instead of just 3/4 cup.
  • When measuring sticky liquids like corn syrup (or even peanut butter), first spray your measuring cup with cooking spray. Or use this handy measuring cup.
  • Make sure you use plain cornflakes, not the frosted ones.
  • Work quickly after you stir in the cornflakes, the mixture starts to set up pretty fast!

CORNFLAKE CANDY VARIATIONS:

  • For extra crunch, stir in some finely chopped roasted peanuts.
  • You can make peanut butter cornflake bars instead. Simply press the hot mixture into an 8 or 9-inch square pan that has been greased with butter.
  • For Christmas, add some green gel food coloring, shape the mixture into wreath shapes, and decorate with red M&M’s.
  • You can’t go wrong drizzling the candies with melted milk or dark chocolate.

Equipment

  • Cookie Scoop Set
  • OXO Good Grips Plastic Measuring Cups, 6-Piece, White
  • Amazon Basics Silicone Baking Mat, Pack of 2, 16.5″ x 11.6″

Ingredients

  • 2 cups of cornflakes
  • ½ cup light corn syrup
  • ½ cup granulated sugar
  • ¾ cup creamy peanut butter
  • ½ tsp vanilla extract

Instructions

  • Measure the cornflakes, set aside. Spread silicone liners or parchment paper on your table or countertop.
  • In a large saucepan, heat the corn syrup and sugar over medium heat until the sugar dissolves. Stir in the peanut butter, then the vanilla.
  • Remove the pan from the heat and gently stir the cornflakes into the peanut butter mixture.
  • Quickly drop by heaping spoonfuls onto the liners. (I use a 1 1/2 tablespoon cookie scoop.)
  • Let the candy cool at room temperature for 20-30 minutes or until set.

Notes

  • Spray your measuring cups with nonstick cooking spray, and the corn syrup and peanut butter will slide right out!
  • We like a higher ratio of sweet peanut butter to cornflakes for our candy. If you want a texture similar to no-bake cornflake cookies, add an additional 1-2 cups of cornflakes.
  • If you need your candy to set up in a hurry, place your silicone liners inside a cookie sheet and pop it in the fridge or freezer for a few minutes.

I made this tonite..the family loves it..and it was really easy. I found it difficult to mix it all together….it cools quickly..I put the bowl in the microwave for 90 seconds..the peanut butter mix softened enough to thoroughly mix it and spread it on a sheet..before it gets hard..cooled it 30 min in fridge..family can’t get enough..lol..I’ll make it again for sure.

So glad it was a hit with your family! It does cool pretty quickly, so thanks for the tip about heating it for a few seconds in the microwave. I hope it’s a family favorite for years to come! 🙂

Organic peanut butter that is the same consistency of creamy peanut butter should work in any recipe. Organic natural peanut butter (the kind that separates), works for some, but not all. For this candy recipe, I think any kind of creamy peanut butter would work, but it might change the consistency of the candies.
