Ingredients
  

  • 1 pound boneless skinless chicken breasts cubed
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 Tbsp olive oil
  • ½ cup diced yellow onion
  • 3 cloves garlic minced
  • ½ cup chopped yellow or red pepper about 3 ounces
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 ½ tsp smoked paprika

Instructions
 

  • Cube chicken and season chicken with salt and pepper.
  • Heat a skillet to medium high heat and add the olive oil. Cook chicken in oil till browned and cooked through, about 10 minutes. Remove from pan.
  • Add onion to the pan, cook 4-5 minutes on medium heat. Add minced garlic and chopped pepper, cook one minute.
  • Turn heat to low; add cream, sour cream, and paprika.
  • Return chicken to pan and heat through.
  • Garnish with green onions or parsley if desired.
