- 1 pound boneless skinless chicken breasts cubed
- ½ tsp salt
- ¼ tsp black pepper
- 2 Tbsp olive oil
- ½ cup diced yellow onion
- 3 cloves garlic minced
- ½ cup chopped yellow or red pepper about 3 ounces
- ½ cup heavy cream
- ½ cup sour cream
- 1 ½ tsp smoked paprika
Cube chicken and season chicken with salt and pepper.
Heat a skillet to medium high heat and add the olive oil. Cook chicken in oil till browned and cooked through, about 10 minutes. Remove from pan.
Add onion to the pan, cook 4-5 minutes on medium heat. Add minced garlic and chopped pepper, cook one minute.
Turn heat to low; add cream, sour cream, and paprika.
Return chicken to pan and heat through.
Garnish with green onions or parsley if desired.
